To obtain quality prunes, the prunes must be harvested between mid-August and the end of September. Once harvested, the plums are washed and dried in specific ovens for about twenty hours. This phase allows them to eliminate 77 to 80% of the water contained in the fruits and guarantees adequate preservation of the prunes. The yield is approximately one third (3 kg of plums give 1 kg of prunes). Once dry, the fruits are rehydrated to give them a soft texture and then pasteurized. Prunes are designated by numbers based on their size. The smallest ones are rated 88/99, which means there are between 88 to 99 prunes per 500g. The largest are called Super Giants. There are between 28 and 33 per 500g. Ente plums, the famous Agén prunes, are plums obtained by grafting. Ente comes from the word "enter" which means "graft" in French. The prune is the sweet good for health par excellence. It is very famous for facilitating the normal functioning of the intestines (100 g per day).
